This is a favorite ‘salad’ beloved by Indians, young and old. It’s so light and it works effectively to cut down the spiciness in dishes.
INGREDIENTS
•1/2 cup plain yogurt
•1/2 cup chopped cucumber
•2 tablespoons chopped fresh cilantro
•2 teaspoons chopped red onion
•1 small chopped tomato
•1 small boiled beet
•1/4 teaspoon ground coriander
•1/4 teaspoon ground cumin
•Few leaves of mint
•Salt to taste
METHOD
1. Mix all ingredients in bowl.
2. Season with salt.
3. Chill raita, covered, until ready to serve.
