Chicken Adobo


  • 1 kg Chicken (skin removed, optional)
  • Lots of Garlic, minced
    Onion, minced or julienned
  • Whole peppercorns
  • 4 Bay leaves
  • 100 ml Soy sauce
  • 120 ml Vinegar
  • 1-2 tablespoons Sugar
  • Salt and pepper to taste


  • Saute lots of minced garlic until brown.
  • Add minced or julienned onion and continue sautéing.
  • Add the chicken pieces (skin removed, if preferred) and sauté until the chicken changes color.
  • Add whole peppercorns and 4 bay leaves.
  • Pour in 100 ml of soy sauce and 120 ml of vinegar.
  • Allow the mixture to boil.
  • Add 1-2 tablespoons of sugar and stir well.
  • Season with salt and pepper to taste.
  • Simmer the mixture until the chicken is fully cooked.
